The HATTORI series includes kitchen knives made of Japanese steel 420J2. It has been developed for products operated in high humidity conditions.
This steel is strong and wear resistant, hardened to 53 +/-2 HRC.
Each model is equipped with a stainless steel bolster that evenly distributes the load during operation.
The ergonomically shaped polypropylene handle is firmly fixed with three bolts.
Thanks to its matte finish, it is slip resistant and ensures safe operation.
All elements of the knife are fitted by hand, which ensures a high level of reliability and hygiene.
Blades sharpened at the optimum angle remain perfectly sharp.
To prolong the life of the knife, it should be washed by hand.
